Ingredients

  • 4 cups chopped kale
  • 2 cups red cabbage, shredded
  • 1/2 cup diced cucumber, peeled and seeds removed
  • 2 tablespoons pumpkin seeds
  • 1/4 cup balsamic vinaigrette salad dressing
  • salt & pepper

Instructions

  1. Clean and prep the kale. Chop the kale into small pieces and let dry.

  2. Shred the cabbage thin. Wash the red cabbage and let dry. 

  3. Mix the kale and cabbage in a medium bowl. Lightly salt and pepper and mix again.

  4. Add the diced cucumber and salad dressing. Mix to combine.

  5. Top with the pumpkin seeds and cover. Place in the refrigerator for 30 minutes before serving.
