Ingredients

  • 1-1/4 lbs. boneless chicken breasts
  • 1 15 oz. jar or can of diced tomatoes
  • 1/2 small white onion, grated on large holes of grater
  • 1/2 teaspoon oregano
  • 1-1/2 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 tablespoon shredded Parmesan cheese
  • 1 tablespoon chopped fresh basil
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Preheat your oven to 350 degrees.
  2. Use a small amount of the olive oil to lightly oil a 2 quart baking dish.
  3. Pour diced tomatoes into baking dish and stir in grated onion, oregano, 1 tablespoon of olive oil and sugar. Lightly salt and pepper this to your taste; stir everything to combine.
  4. With small amount of remaining oil, lightly oil both sides of chicken breasts and sprinkle with salt & pepper.
  5. Lay chicken in sauce and push down to submerge a little in the sauce.
  6. Sprinkle with Parmesan cheese and fresh basil.
  7. Cover with foil and bake for 30 minutes.
  8. Remove from the oven and sprinkle with Mozzarella cheese.
  9. Put back in the oven uncovered for 5 minutes or until cheese has completely melted.
  10. Make sure chicken is cooked through.
