Easy Tzatziki Sauce

Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup sour cream
  • 1 medium cucumber, grated and lightly salted (see notes)
  • 2 cloves garlic, minced
  • 1-1/2 tablespoon fresh dill, chopped fine
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lemon juice

Instructions

  1. Wash the cucumber and wipe dry. Peel the cucumber in "stripes" leaving 1/2 of the peel intact.

  2. Using a hand grater, grate the cucumber until you get about 1-1/2 cups. Lightly salt the cucumber and let sit on a paper towel to absorb the water. Change the paper towel if it gets too wet.

  3. Mix everything together in a small bowl.  Taste and add additional lemon juice if desired. Refrigerate for 1 hour before using.
