Ingredients

  • 1-1/4 cups chopped red onion
  • 2 cloves garlic
  • 1/2 teaspoon dried ginger or 1 small chunk of fresh ginger grated
  • 1 small chili pepper or 1 small jalapeno pepper
  • 1 tablespoon coconut oil
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2/3 cup water
  • 1 small tomato seeded and chopped
  • 1 can coconut milk
  • 2 cans chickpeas we use about 1-1/2 cans
  • 1 medium lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Place the first 4 ingredients in a food processer and pulse until semi-smooth. Heat the oil in a medium skillet and cook the onion mixture for about 5-6 minutes, or until onions are starting to brown.
  2. Add the curry powder, turmeric and paprika to the pan. Stir through the onion mixture and cook for about 2 minutes.
  3. Slowly stir the water into the skillet. Add the chopped tomatoes, coconut milk, chickpeas and salt and pepper.
  4. Bring mixture to a light boil. Squeeze in the juice of 1 lime. Stir and let simmer for about 5 minutes.
