Ingredients

  • 2 lbs. boneless, skinless chicken thighs
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon butter
  • 2-3 cloves garlic, minced
  • 1 lemon
  • 1/2 teaspoon onion powder
  • 1 can chickpeas
  • 1 tablespoon capers (optional)

Instructions

  1. Season both sides of chicken with with salt and pepper.
  2. Add 1 tablespoon of olive oil to a large skillet and turn heat to medium-high.

  3. Add chicken to skillet, top sides down, and cook 6-7 minutes or until tops are nicely browned.
  4. Flip chicken and add the butter and garlic to the skillet. Squeeze the juice of half of the lemon over the chicken.

  5. Cut the other half of lemon into thin slices and lay on top of the chicken.
  6. Lower heat and cook chicken for about 15 minutes, flipping chicken a few times as it cooks.
  7. Remove chicken from the pan and add 1/2 tablespoon of olive oil and the chickpeas. Lightly sprinkle chickpeas with salt, pepper and onion powder. Stir with a spatula to combine.
  8. Lay chicken pieces back in the skillet and cook for about 5 minutes or until chicken is cooked through.
