Ingredients

  • 8 ozs. ham, cut into small pieces
  • 1 small onion, diced fine
  • 1 tablespoon olive oil
  • 2-1/4 cups orzo pasta, uncooked
  • 2-1/2 cups chicken broth
  • 2 cups milk
  • 1/2 teaspoon of salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. In a medium saucepan, cook ham and onion in oil until the onion is soft.
  2. Add the orzo pasta, and cook for about 2 minutes.
  3. add the chicken broth, milk and spices.
  4. Stir to combine while bringing to a light boil.
  5. Reduce heat to a low simmer and cook for 10 minutes, stirring often.
  6. When the noodles are tender and most of the liquid has been absorbed, stir in the cheese.
