Broccoli and Stuffing Casserole

This is a great recipe to get your kids to try broccoli! It's hard to resist when added with stuffing and a little cheese.

Ingredients

  • 1 (10 oz.) package chopped broccoli, thawed
  • 1-1/2 cups chicken broth
  • 1 tablespoon butter
  • 1 (6 oz.) box stuffing (use Kraft stove top)
  • salt & pepper to taste
  • 3/4 cup shredded cheddar cheese

Instructions

  1. Thaw broccoli in the microwave for about 4 minutes. Make sure broccoli is well-thawed.

  2. Preheat oven to 350 degrees.

  3. Simmer thawed broccoli for a few minutes in chicken broth. Lightly salt and pepper the broccoli as it cooks.

  4. Add the stuffing mix to the pan with the cooked broccoli and stir through.

  5. Stir in 1/2 cup of cheese.

  6. Cover and let sit for about 4 minutes. 

  7. Pour mixture into a casserole dish and bake uncovered for 10-15 minutes. Add 1/2 cup of cheese to the top and put back into the oven to melt.
