DAY 6’s Cheese Calzone was this week’s top pick. It’s very easy to prepare, particularly if you use the pre-shredded cheeses! We also used nonfat cottage cheese as a substitute for the ricotta, because sometimes ricotta can be a bit bland. The cottage cheese is less fattening, too! The meal is a great change of pace, but beware- they are delicious and heavy!
This Week ….
We hope everyone is enjoying the abundance of fresh fruits and vegetables that are becoming widely available everywhere this time of the year!
Day 2’s Chicken and Dumplings is an easy one-dish meal! You can even prepare the whole thing the night before. Add a side dish of another veggie if you think you won’t have enough carrots for everyone.
The bourbon in Day 4’s Pork cooks out during the basting and stove-top cooking. It just leaves a nice mellow taste to the gravy. If you want, you can substitute a pork tenderloin for the chops. Just follow the same directions! We have made it both ways, and they are equally delicious.
Let us know what you think of Day 5’s Burgers. We all love hamburgers, especially grilled in the summer. However, sometimes they can become monotonous, so we thought that this recipe might provide a welcome change of taste to an all-time favorite.
This week’s dessert recipe, STRAWBERRY CREAM CAKE , is another way to use up those delicious fresh strawberries!
Purchase a Steamer Basket –
One of the best ways to cook vegetables if you’re in a hurry is by lightly steaming them. If you have carrots left over from Day 2, peel them and slice them into pieces. Add carrot pieces to the steamer basket with the broccoli for Day 3’s Steamed Broccoli.
