DAY 4’s Pan Poached Salmon with Cucumber Lemon Dill Sauce made this week’s favorite meal. We are always on the lookout for healthy and delicious, and this meal was definitely a winner for both.

 

This Week ….

Day 1’s Easy Pasta Primavera with fresh Asparagus was fabulous and a great way to use some summer veggies! We love the combination of fresh asparagus, fresh mushrooms, and red pepper for a change of pace. A quick and easy meal to prepare.

DAY 2’s Applesauce meatloaf is also a nice change! It’s easier to prepare than traditional meatloaf, too!

For the Watermelon Cucumber salad – cut up your salad greens and lay in a wide bowl. Top greens with fresh diced cucumber and watermelon pieces. Sprinkle everything lightly with salt and pepper. Add the Feta cheese. Serve with your favorite salad dressing.

DAY 5’s Sheet Pan Sausage and Potatoes doesn’t get any better. What’s you favorite sausage? Sweet or Hot?

Make sure and try DAY 3’s Easy Orzo with Lemon Romano. This side dish is a refreshing change of pace that you will love! Sprinkle a little extra Romano cheese or Parmesan on top of each serving!

This week’s dessert recipe, Fresh Strawberry Mousse, is a delicious way to use up those fresh strawberries!

You might not of given a lot of thought about everyone’s summer favorite fruit when it comes to nutrition, but watermelon is a little powerhouse of antioxidants.

Like most fruits and vegetables, watermelon is high in antioxidants. This means when you consume a slice or two of this juicy plant flesh, an army of compounds explode through your bloodstream, searching for and destroying all those enemy free radicals that are causing inflammation and trying to break your body down. Loving watermelon means loving your health.
