FRESH STRAWBERRY MOUSSE
1pint fresh strawberries
2 ( 3 oz.) packages of strawberry Jello
1 Pint whipping cream
2 Tbsp. sugar
Crush the strawberries and sprinkle with a little bit of water and
sugar. Let sit for about 5 minutes. Drain the juice and add enough water
to make 1-1/2 cups. Bring the juice mixture to a boil and stir in the
gelatin. Dissolve and cool. Add the fresh crushed strawberries and
sugar. Whip the cream until it forms soft peaks and fold it into the
strawberry mixture.
Pour mixture into a 2 quart ring mold.
Let chill in the refrigerator for at least 2 hours.
