DAY 3’s Sausage Quesadillas were the favorite this week. These are surprisingly filling and delicious for something so easy to prepare!

 

This Week’s Recipes –

DAY 2’s Beefy Noodle & Broccoli with Peanut Sauce was a recipe from our 13 & 13 challenge. The complete meal, including all ingredients, was made for under $13.00. The recipe took 13 minutes to prepare! The best thing about this recipe is everyone loved it! We hope to bring you more recipes from the 13 & 13 challenge!

DAY 5’s Angel Hair Pasta with Roasted Zucchini was another big hit with everyone. We love how easy this dish is to prepare and the simple tomato sauce does not overpower the dish. A great way to eat more of those delicious summer zucchinis –  Enjoy!

 

 

Try very hard to find Key lime juice for this week’s Key Lime Cake. It isn’t quite the same with regular lime juice. However, we know that finding this particular juice can often be next to impossible (usually we can’t find it here in the northeast), so if you can’t find it, use the regular lime juice. It won’t taste the same, but will be delicious nonetheless!

Eat more fresh tomatoes this summer! A tomato isn’t just a garnish. These super-tasty spheres are bursting with the powerful antioxidant Vitamin C and lycopene. Vitamin C bolsters the immune system and fends off cancer-causing free radicals, and lycopene is instrumental in cutting the risks of certain types of cancers. So eat up those tomatoes! Toss them in salads, make fresh pasta sauce, and don’t forget about garden-fresh salsa!
