KEY LIME CAKE
1 box lemon cake mix
1 small box instant lemon pudding
3/4 c. water
1/2 c. vegetable oil
4 eggs
5 Tbsp. key lime juice
ICING:
1 1/2 c. powdered sugar
3 Tbsp. key lime juice (more if needed)
Preheat oven to 350 degrees.
Lightly spray a 9x13x2 inch pan with nonstick cooking spray. In a large bowl, combine all ingredients, beating for 2 minutes at medium speed. Pour into greased pan.
Bake for 45 minutes. Test with toothpick in center for doneness. Cool completely before icing.
To prepare icing, combine ingredients in a medium bowl and spread over top of cake. (Should be like a glaze).
