DAY 2’s Spicy Beef Enchiladas are always well-received at the dinner table. If you want to cut a corner, buy a package of taco seasoning mix to use instead of making your own seasoned beef- it will save you some time. Always remember also that you can either shred your own cheese or buy it pre-shredded. The pre-shredded is usually slightly more expensive, but is well worth it if you are trying to pull together a meal in a hurry.
