Skillet Mexican Chicken and White Beans

  • 1-1/4 lb. chicken breast, thin sliced breasts
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • 2 (15 oz.) cans white beans, drained (We use Great Northern White Beans)
  • 1 cup cherry tomatoes, cut in half
  • 1 cup shredded mozzarella
  • salt & pepper


  1. Sprinkle both sides of chiken strips with salt and taco seasoning.

  2. Using a large skillet with a lid, heat olive oil on medium high heat.

  3. Add chicken strips to the hot oil and cook for about 3-4 minutes, flip chicken over and cover with a lid, cook for about 3-4 more minutes.

  4. Uncover and add beans and tomatoes to the skillet, sprinkle with salt and taco seasoning. Cook for about 3-4 minutes or until beans are heated through.

  5. Sprinkle chicken with cheese and cover with the lid until the cheese has melted.
