  • 1 medium butternut squash
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 2 tablespoons butter


  1. Preheat oven to 350 degrees.
  2. Using a sharp heavy knife, cut the butternut squash in half lengthwise.
  3. Using a large spoon, scoop out the seeds and the stringy pulp.
  4. Lay the 2 sides of squash on a foil-lined cookie sheet or a 9 x 13 baking dish, flesh side up.

  5. Sprinkle with salt, pepper and cinnamon.
  6. Place dabs of butter on squash and in the well of the squash.
  7. Sprinkle with brown sugar.
  8. Bake for about 1-1/2 hours or until the squash is easily pierced with a fork.

Recipe Notes

You can add a little water to the baking dish to prevent the dish from burning.
