  • 2 cups pumpkin seeds rinsed well and dried
  • 1 tablespoon olive oil

  • 1/2 teaspoon ground cayenne pepper a little more if you like it spicy!
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 teaspoon salt

  1. Preheat your oven to 325 degrees.
  2. Using a sharp knife, cut the lid of your pumpkin in a circle that is pretty. This is the top of the pumpkin where you need to enter with your big spoon.
  3. Carefully remove all the seeds from your pumpkin.
  4. Working in your kitchen sink, place all the seeds in a colander and rinse well.  Separate the seeds from the membranes and rinse again.
  5. When the seeds are well rinsed, lay them on a paper towel to dry.
  6. When the seeds have dried, toss them with the olive oil in a medium bowl.
  7. Mix together the seasonings and evenly coat the seeds.
  8. Place the seeds on a foil-lined baking sheet and bake for about 15.
  9. Flip the seeds and continue cooking for 10 minutes.
  10. Store pumpkin seeds in an air tight container or Ziploc bag.
