Using a fork, whip together all of the ingredients, except for 1 tablespoon of shredded cheese. Melt the butter in a skillet over medium-high heat. When the butter starts to lightly bubble, pour the eggs slowly into the skillet. Using a spatula, push the eggs around quickly until they start to get firm. Once the eggs are cooked through, sprinkle with the additional cheddar cheese and serve on two plates with hot buttered toast.
