Ingredients

  • 6 Romaine lettuce leaves about 2 cubs
  • 2 large soft boiled or poached eggs peeled and cut in half
  • 1/2 cup chopped red pepper
  • 2 slices avocado
  • 1/4 cup feta crumbled feta cheese
  • 1 tablespoon toasted sunflower seeds

Instructions

  1. Cook whole egg in lightly boiling water for 5-7 minutes.
  2. Peel cooled egg and chop into 2-4 pieces.
  3. Clean the romaine lettuce leaves and chop small.
  4. Place lettuce on a plate and top with eggs and vegetables.
