Ingredients

  • 4 boneless skinless chicken thighs
  • 4 cups chicken broth
  • 1 13,6 oz. can unsweetened coconut milk
  • 3-4 cloves garlic
  • 1 bunch green onions, cleaned and chopped
  • 1-1/2 tablespoons curry powder
  • 2 stalks lemongrass minced
  • 1 tablespoon peeled and minced fresh ginger
  • 1 5 oz. package organic baby spinach
  • 1 teaspoon dried cilantro
  • 3 teaspoons chicken base optional
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Place everything in the slow cooker with the exception of the spinach and lime juice.
  2. Cook on high for about 4.5 hours.
  3. Carefully remove chicken and shred with a fork.
  4. Put chicken back into the slow cooker along with the spinach and lime juice.
  5. Cook for an additional 20 minutes or until spinach is tender.
