  • 2 tablespoons butter, divided
  • 2 lbs. sweet potatoes, about 3 - peeled and sliced
  • 1/2 tablespoon dried rosemary
  • 1/2 tablespoon dried thyme
  • salt and pepper
  • 1-1/2 cups heavy cream
  • 1 cup shredded Parmigiano-Reggiano
  • 1/2 tablespoon dried parsley


  1. Preheat oven to 350° F.
  2. Grease a 2-quart baking dish with 1 tablespoon of butter.
  3. Arrange half of the potato slices in a single layer on the bottom of the baking dish.
  4. Pour half of the cream over the potatoes.
  5. Sprinkle with a little rosemary, thyme, salt and pepper. Dot with remaining butter.

  6. Sprinkle with half of the cheese.

  7. Repeat with the remaining potatoes, spices, cream and cheese. Sprinkle with parsley.

  8. Cover and place in the oven and bake for about 25 minutes, uncover and continue to bake for an additional 10 minutes or until the potatoes are fork tender.
