Ingredients

  • 2 lbs. baby yellow potatoes, cut in half
  • 1 tablespoon olive oil
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1/2 tablespoon dried parsley
  • 1 tablespoon grated Parmesan cheese
  • Salt and pepper

Instructions

  1. Preheat oven to 425 degrees F.
  2. Spray a baking dish with nonstick cooking spray.
  3. Place potatoes in the baking dish.
  4. Combine the oil, melted butter, lemon juice, garlic powder and dried parsley.
  5. Drizzle over potatoes.
  6. Sprinkle with salt and pepper.
  7. Cover and place baking dish on the center rack of oven
  8. Bake for about 20 minutes.
  9. Uncover and sprinkle with Parmesan Cheese.
  10. Bake for about 10 more minutes or until edges become crispy.
