  • 1/2 lb. turkey or chicken sausage, casings removed and crumbled
  • 1 tablespoon olive oil
  • 1 small onion, diced fine
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 8 cups chicken broth, divided
  • 1 (15 oz.) can diced tomatoes
  • 1 cup dried green or brown lentils, rinsed
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach, cleaned and chopped


  1. Using a soup pot or stockpot, saute onions in olive oil for about 2 minutes or until they start to get tender.

  2. Add sausage to the pan and continue to saute breaking up sausage with a spatula as it cooks. 

  3. Add garlic to the pan and continue to cook for another minute.

  4. Add everything to the pan with the exception of 1 cup of chicken broth and the  spinach.

  5. Stir to combine and simmer for 35-40 minutes or until lentils are tender. Add the spinach 15 minutes before the finished cooking time.
