Ingredients

  • 9-10 medium red potatoes
  • 4 tablespoons butter
  • 3 tablespoons dry grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400 degrees. Spray a 9 x 13" casserole dish with nonstick spray.

  2. Wash potatoes and let them dry. Cut each potato in half.

  3. Place the butter in the casserole dish and put dish in the oven for about 5 minutes to melt the butter.

  4. Remove dish from the oven and sprinkle the melted butter with Parmesan cheese. Shake some salt & pepper overall and stir everything to combine.

  5. Place potatoes in the dish skin side up. Sprinkle tops with a little salt & pepper.

  6. Bake uncovered for 40-45 minutes.
