  • 8 large eggs, hard boiled and peeled
  • 2 medium soft avocados
  • 1 tablespoon fresh lime juice
  • 3 tablespoons mayonnaise
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • salt and pepper, to taste


  1. Start by slicing each of your hard boiled eggs in half lengthwise.

  2. Carefully remove the yolks with a spoon and transfer to a small mixing bowl. Set the cooked egg whites aside.
  3. Add the avocado, lime juice, mayonnaise, red pepper flakes, garlic powder, onion powder, and smoked paprika to the bowl with the yolks. Season with salt and black pepper, to taste, and mash everything together until thoroughly combined.

  4. Fill each egg half with a tablespoon of the avocado mixture and top with fresh parsley. Serve immediately and enjoy!
