  • 1 large butternut squash
  • salt & pepper
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar


  1. Preheat oven to 400 degrees.
  2. Poke a few holes in the squash and microwave for a few minutes to soften the outer shell.
  3. Carefully cut butternut squash in half lengthwise and use a large spoon to scoop out seeds.
  4. Place butternut squash on a baking sheet skin side down.
  5. Brush squash halves with olive oil. Sprinkle squash with salt, pepper and brown sugar.
  6. Bake 40-45 minutes or longer depending on the size of the squash.
