  • 4 large portobella mushroom caps
  • 1 tablespoon olive oil
  • salt & pepper
  • 1-1/2 cups tomato sauce
  • 1 teaspoon oregano
  • 2 teaspoons crushed garlic


  1. Preheat oven to 400 degrees.
  2. Remove the dark insides from the mushrooms.
  3. Place the mushrooms on a baking sheet and brush with olive oil.
  4. Roast mushroom caps for about 8-10 minutes.
  5. While mushrooms are baking, saute garlic in olive oil until tender. Add tomato sauce and oregano to the cooked garlic. Let simmer gently while the mushrooms finish cooking.
  6. Remove mushroom caps from the oven and sprinkle lightly with salt & pepper and a touch of oregano. Carefully drain any liquid from the mushrooms.
  7. Spoon sauce over mushrooms followed by a sprinkle of cheese.
  8. Place back in the oven for about 5 minutes or until heated through.
