Ingredients

  • 1 cup brown rice
  • 2-1/4 cups water
  • 1 small onion, diced fine
  • 2-3 cloves garlic, diced fine
  • 2 teaspoons coconut oil
  • 1/2 tablespoon turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon chicken base
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon milk
  • 1 tablespoon butter

Instructions

  1. Using a medium pan, gently saute onions and garlic in coconut oil for about 2 minutes.
  2. Add the rice to the pan and continue stirring and cooking until the rice is well coated with the onion mixture.
  3. Add the spices, chicken base, salt and pepper to the pan. Stir through the rice mixture.
  4. Stir in the water and bring to a light boil.
  5. Cover; reduce heat and cook for about 35-40 minutes.
  6. Remove from the heat and stir in milk and butter.
  7. Cover and let sit and steam for about 5 additional minutes.
