Fajitas were typically made with a seared skirt steak and then then served in a warm tortilla with sauteed peppers and onions. They were seared in a hot skillet mostly over an open fire. Many restaurants today still serve a “sizzling” fajita dish that sounds and resembles that of the cowboy campfire days.
Nowadays, having Fajitas typically means using any type of seasoned meat or seafood that has been cooked using just about any method, then adding the sliced meat or seafood to a flour tortilla with delicious toppings like cheese and sour cream.
But, what are the best side dishes to serve with our chicken fajitas or any meat fajitas?

- juice of 1 lime
Mix everything in a medium bowl and refrigerate for at least one hour.

- 2 (15 oz) cans pinto beans, drained
- 2 tablespoons of butter

- 3 tablespoons onion, minced fine
- 1-1/2 cups chicken broth
Stir everything into your slow cooker or crockpot. Cook on low for 4 hours.
Mash with a potato masher until mostly creamy but leave a few chunks.
Sprinkle with cheddar cheese and cover crockpot until cheese melts.
