These meatballs are from “Chef Chloe” who has an amazing way of getting you excited about Vegan dishes.
She is in no way trying to get people to convert to the Vegan way of eating, but more so she just wants you to give it a try. And that’s exactly what I did and I must say I was pleased.
Chef Chloe makes these into Meatball Sliders … but I must say it is VERY difficult not to add that big little pile of cheese on top! But I did not. I stayed true and they were delicious.
How to Make Delicious Vegan Meatballs in Tomato Sauce
2 tablespoons olive oil
1 onion, finely chopped
2 green onions, chopped
8 ounces sliced mushrooms (I used sliced baby bella mushrooms)
3 garlic cloves, minced
1½ cups cooked brown rice, cooled
½ cup Italian bread crumbs
¼ cup all-purpose flour
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoons salt
1 teaspoon black pepper
2 cup marinara sauce, heated
Saute the mushrooms, onions and garlic in olive oil until tender. Add the rice to the pan and sprinkle with the spices, salt and pepper. Cook for about 2 minutes and then stir in the bread crumbs and flour.
Place everything in a food processor and pulse until everything comes together. I used a mini food chopper and it worked just fine. You just have to do this in smaller batches.
Form meatballs with your hands and brown in a skillet using a little bit of olive oil. Add the tomato sauce to skillet with the meatballs or you can heat it up in a separate pan.
This was such a delicious combination! Mushrooms, brown rice and green onions! We could of eaten half of this right out of the pan!
