- 1 lb. 94% lean ground turkey
- 2 cups grated zucchini (about 1 medium zucchini)
- 4 oz. mushrooms, chopped
- 1/2 cup grated carrot - about 1 small carrot
- 1 tablespoon dried minced onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 medium egg
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 teaspoons Dijon mustard
Preheat oven to 400 degrees.
Cook mushrooms and garlic in olive oil until mushrooms are tender. Salt and pepper lightly about half way through cooking. Make sure to cook off all liquid.
Add everything to a medium bowl and mix well using your hands.
Place the bowl in the refrigerator for about 30 minutes.
Lay foil on a cookie tray and spay lightly with nonstick spray
Form meatballs using a small ice cream scoop.
Arrange meatballs on the tray and bake for 20-22 minutes.
