The Best Chicken Piccata

This is absolutely the best ever chicken piccata recipe you can make for dinner! The chunks of chicken cook quickly and are so tender and delicious. The sauce is perfectly creamy and zippy at the same time!
What really makes this chicken recipe stand out is that it uses chucks of chicken instead of larger pieces. Marinating the chicken adds such a nice flavor and ensures the chicken to be extra tender.
Brown floured chunks of chicken in olive oil and butter. Toss in the minced garlic.
Squeeze lemon juice over cooked chicken and add fresh parsley and 3 pieces of lemon.
Add chicken broth and capers to the skillet. Stir, bring to a light boil; reduce heat and let simmer for about 5-6 minutes.

- 1-1/4 lbs. boneless chicken breast
- 3/4 cup Wishbone Italian dressing
- 1/2 cup flour
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 lemon
- 2-3 teaspoons minced garlic jarred garlic
- 2 tablespoons fresh parsley chopped fine
- 1-3/4 cup chicken broth
- 2-3 tablespoons capers
Place boneless chicken breasts in a large resealable bag along with the Italian dressing and marinate for 8 hours or one day. Do not marinate for 24 hours.
Remove chicken from marinade and cut into small chunks.
Place flour in a deep dish and mix in salt.
Roll the chicken chunks around in the flour and coat well.
Wash the outside of the lemon and cut in half - save about 3 thin slices.
Using a large skillet, cook chicken in olive oil and butter over medium heat until well browned. About 4 minutes per side.
Squeeze the juice from the lemon over the chicken and add the 3 slices of lemon to the skillet.
Continue to brown chicken for another minute.
Add chicken broth and capers. Bring to a light boil; reduce heat and cook for about 5-6 minutes or until chicken is cooked through. Do not overcook.
Garnish your delicious chicken piccata with parsley.
