Two things we love – breakfast and yummy tater tots! That’s why we love this Tater Tot Breakfast Casserole! Start a lazy weekend with a homemade breakfast that is sure to be a winner with the whole family.

Tater Tot Breakfast Casserole with Sausage

These golden nuggets of potatoes are delicious in a casserole dish that also includes sausage and shredded cheese. A hearty and yummy breakfast that will make your family want to linger and enjoy a weekend breakfast together.

We love Tater Tots and think they should be enjoyed often. Whether in a casserole or as a side dish with a big bowl of spicey ketchup.

This recipe only takes a handful of ingredients and most you should have on hand.  We always use Jimmy Dean Breakfast sausage for our breakfast casserole.

Ingredients Need for Easy Breakfast Casserole with Tater Tots

Start out with your favorite ground sausage, some fresh eggs, and a few handfuls of shredded cheese. To get the best flavor in your cheese try grating your own fresh cheese.  Buy your family the best and healthiest eggs possible. You can read more about that here. How to choose your fresh eggs.

  • Tater Tots
  • Ground sausage – we love Jimmy Dean ground sausage
  • Large eggs – organic is possible
  • Half and half
  • Shredded cheddar cheese – save money by shredding your own cheese.
  • Garlic powder

Instructions on How to Make Breakfast Casserole

STEP 1. Preheat the oven to 350 ℉.

STEP 2. In a medium skillet, cook the ground sausage over medium heat while breaking into small pieces until no longer pink.

STEP 3. Remove skillet from heat, drain grease from sausage and set aside.

STEP 4. Grease a 9′ x 13′ baking dish with cooking oil spray. (Glass works best.)

STEP 5. Spread the crumbled sausage in an even layer over the bottom of the baking dish.

STEP 6. In a medium bowl whisk eggs, half and half, garlic powder, salt and pepper until well combined. Pour the egg mixture over the sausage in the baking dish and top with the shredded cheese.

STEP 7. Place frozen tater tots evenly over the top of sausage, egg and cheese mixture. Do not submerge tater tots.

STEP 8. Bake for approx. 50 minutes or until a knife inserted in the middle comes out clean. Remove the casserole from the oven and let it sit for 5 minutes before serving.

How to Store Tater Tot Casserole

Just store in an air-tight container for about 4 days. Reheat in your microwave. Leftovers are awesome.
