Sweet Potato Wedges are Easy to Prepare, and oh so Healthy!
This potato side dish is often overlooked because it might seem like it’s a lot of work to prepare. This is so not true as it only takes about 4-5 minutes of prep work and then an additional 20-25 minutes of bake time to have this healthy little tater on the table.
- Sweet potatoes are rich in beta-carotene which is an antioxidant important to a healthy body.
- The recommended daily amount of vitamin A can be achieved with only about 1/2 cup of sweet potatoes.

Give Your Family Some Healthy Sweet Potatoes They will Love!
- 2 large sweet potatoes unpeeled and cut into wedges
- 2 tablespoons olive oil
- 1/2 teaspoons salt
- 2 teaspoons sugar mixed with 1/2 teaspoon cinnamon

Preheat oven to 425 degrees.

Spray a cookie sheet with nonstick spray.

Using a sharp knife, slice off just the end tips of each potato.

Slice the sweet potatoes in half lengthwise, then cut each half again into wedges.

Place potato wedges in a large bowl and coat with olive oil. Sprinkle lightly with salt.

Place sweet potatoes on the cookie sheet, skin side down, and sprinkle with the sugar and cinnamon mixture.

Bake for about 20-25 minutes. Serve with honey butter.

Mix together –
2 tablespoons soft butter
1 tablespoons honey
