Spinach Pasta Bake – Casserole Lasagna Style with Ricotta Cheese and Tomato Sauce
This is seriously a great pasta recipe that comes in handy not only for a pretty quick dinner, but also makes enough for two meals. Serve for dinner and reheat or freeze the leftovers.
With such a gusto of a meal you would think it would take hours in the kitchen to prepare, but once you get the pasta cooked, it’s just a pop in the oven and a super-delicious dinner is on the table in no time.
We like using ziti pasta in this recipe, but you could also use penne pasta if preferred. Choose your favorite jarred sauce or make a fresh batch of simple homemade marinara if you have time.

- 1 lb. box ziti pasta
- 2 (10 oz.) boxes frozen spinach, thawed and water pressed out
- 1/2 tablespoon olive oil
- 1 (15 oz.) container ricotta cheese
- 3 large eggs, lightly beaten
- 1 (32 oz. ) jar spaghetti sauce
- 1/2 cup Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon salt

Preheat oven to 350 degrees F.

Spray a 9 x 13 casserole dish with non stick spray.

Cook ziti pasta according to package directions, drain and put back in the same pot.

Gently stir in the olive oil and ricotta cheese. Lightly salt & pepper and add the Parmesan cheese and beaten eggs.

Stir in the spinach, pasta sauce, a little more salt and pepper. Make sure everything is evenly stirred and distributed.

Pour mixture into casserole dish and sprinkle with mozzarella cheese.

Bake uncovered for 25-30 minutes.
Pasta bake casserole is easy to prepare and ready to be baked in the oven for 25-30 minutes.
Gently stir in the olive oil, a little salt & pepper and then the ricotta cheese. Add some dried parsley if you have some.
Make sure the spinach is well thawed, you can easily do this in the microwave, and then press out as much of the watery liquid that you can. Lightly salt & pepper the spinach before adding to the pasta and ricotta.
