5 tablespoons Dry White wine
2 sprigs fresh rosemary
2 sprigs fresh thyme

1 lb chicken thighs or breast, cut into chunks
1/2 lemon, juiced
3 tablespoons Olive oil
2 garlic cloves
1 teaspoon Oregano
salt and black pepper to taste
Marination of Pork – Greek marinade for pork souvlaki
1 lb pork tenderloin, cut into chunks
3 tablespoons White wine vinegar
3 tablespoons Olive oil
2 garlic cloves
2 sprigs fresh rosemary
2 sprigs fresh thyme
Salt and black pepper to taste
Tzatziki Sauce
2 cups Greek yogurt
1 cucumber, grated and drained
2 garlic cloves, grated
1/2 teaspoons salt
1 teaspoon Dillweed
1 teaspoon fresh lemon juice
3 tablespoons Olive oil
How to Make Souvlaki – Simple Steps
1. Combine all skewer marinade ingredients in a large casserole dish. Add skewers and let soak 2 hours.
2. To marinate chicken combine chicken chunks and all chicken marinade ingredients in either a large bowl or zip lock bag. Seal and place in refrigerator for 2 hours.
3. To marinate pork combine pork chunks and all pork marinade ingredients in either a large bowl or zip lock bag. Seal and place in refrigerator for 2 hours.
4. After 2 hours, thread one marinated chicken piece, one marinated lamb and one marinated pork piece onto the prepared skewers. Repeat the process leaving 6 chunks of meat on each skewer.
5. Meanwhile, prepare tzatziki. Add yogurt, garlic, lemon and salt to a serving bowl.
Mix to combine. Add cucumber and dillweed and stir well. Drizzle with olive oil. Refrigerate until ready to serve.
6. Prepare your grill or heat a grill pan to medium heat per manufacturer’s instructions. Cook 5 minutes each side or until cooked through.
