Easy Southwestern Beef and Rice Skillet Dinner
The ingredients for this easy recipe are things you should have in your pantry and fridge. Just purchase some fresh ground beef and red bell pepper.
Ingredients Needed for Skillet Ground Beef and Rice:
- Lean ground beef
- Olive oil
- Onion – yellow onion
- Garlic – fresh garlic
- Red bell pepper
- Can Rotel Diced Tomatoes & Green Chilies
- Beef broth or stock
- Long grain rice
- Worcestershire sauce
- Cumin
- Shredded Cheddar cheese
We use regular cheddar cheese for this recipe, but you can substitute a Mexican blend if preferred. It is also cheaper to buy a block of cheddar cheese and grate your own. Saves Money!

How to Cook Southwestern and Rice Skillet Dinner:
- In a large skillet, brown onion, garlic, and peppers in olive oil for about 3-5 minutes or until soft.
- Push cooked veggies to the side and add the ground beef.
- Cook beef until cooked through about 6-7 minutes. Salt and pepper beef as it cooks. Drain and grease and return to the stove at medium heat.
- Add the beef broth, rice, cumin, undrained Rotel, and Worcestershire Sauce to the skillet and stir until well combined.
- Bring everything to a boil, reduce heat and cover. Simmer for another 20 minutes or until the rice is tender.
- Remove from the heat and sprinkle generously with the cheese. Cover the skillet and let the mixture rest for 5 minutes or until the cheese melts and gets nice and gooey.
- Garnish with chopped parsley if desired.

- 1 lb. lean ground beef

- 1 10 oz. can Rotel Diced Tomatoes & Green Chilies - Do not drain
- 1 ½ cups beef broth or stock
- 1 cup long grain rice uncooked
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 ½ cups shredded Cheddar cheese
- Chopped fresh parsley for garnish if desired
