How to Cook Yummy Ground Beef and Rice Skillet!

We love easy ground beef recipes and this on cooks up in just one skillet so you have an easy dinner with little mess!

Cooked hamburger goes really well with onions, tomatoes and rice!  Add some spices and layer it with yummy cheddar cheese, and an awesome family meal is on the table in no time.

Easy Southwestern Beef and Rice Skillet Dinner

The ingredients for this easy recipe are things you should have in your pantry and fridge.  Just purchase some fresh ground beef and red bell pepper.

Ingredients Needed for Skillet Ground Beef and Rice:

  • Lean ground beef
  • Olive oil
  • Onion – yellow onion
  • Garlic – fresh garlic
  • Red bell pepper
  • Can Rotel Diced Tomatoes & Green Chilies
  • Beef broth or stock
  • Long grain rice
  • Worcestershire sauce
  • Cumin
  • Shredded Cheddar cheese

We use regular cheddar cheese for this recipe, but you can substitute a Mexican blend if preferred. It is also cheaper to buy a block of cheddar cheese and grate your own. Saves Money!

This Southwestern Beef and Rice Skillet Recipe is sure to please the whole family! We love one pan or one skillet meals that save time in the kitchen. This recipe is super flavorful and will become a family favorite in no time.

How to Cook Southwestern and Rice Skillet Dinner:

  1. In a large skillet, brown onion, garlic, and peppers in olive oil for about 3-5 minutes or until soft.
  2. Push cooked veggies to the side and add the ground beef.
  3. Cook beef until cooked through about 6-7 minutes. Salt and pepper beef as it cooks. Drain and grease and return to the stove at medium heat.
  4.  Add the beef broth, rice, cumin, undrained Rotel, and Worcestershire Sauce to the skillet and stir until well combined.

  1. Bring everything to a boil, reduce heat and cover. Simmer for another 20 minutes or until the rice is tender.
  2. Remove from the heat and sprinkle generously with the cheese. Cover the skillet and let the mixture rest for 5 minutes or until the cheese melts and gets nice and gooey.
  3. Garnish with chopped parsley if desired.

  • 1 lb. lean ground beef
  • 1 tablespoon olive oil

  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 10 oz. can Rotel Diced Tomatoes & Green Chilies - Do not drain
  • 1 ½ cups beef broth or stock
  • 1 cup long grain rice uncooked
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 ½ cups shredded Cheddar cheese
  • Chopped fresh parsley for garnish if desired

What to Serve with Southwestern Beef and Rice Skillet Dinner?

Drizzle on some delicious creamy avocado sauce.
Serve with sour cream – if you don’t have sour cream then Ranch dressing will do.

Tossed Salad with Hard Crumbled Cheese
Corn on the Cob

Additional Serving Suggestions:

Tacos – grab some soft or hard taco shells and use beef and rice skillet mixture for the filling. Don’t forget some shredded lettuce and sour cream.
Bowls – Grab a bowl and fill it up with all your favorites. Add a little diced tomatoes, avocado and cooked corn.
Corn or Black Beans – Toss in about 1/2 cup of corn or black beans.

How to Store and Freeze Beef and Rice Skillet

Reheat – Reheat leftovers in the microwave for about 30 seconds or until hot.
Store – Store any leftovers in an airtight container in your refrigerator for up to 4-5 days.
Freeze – Place leftovers in an airtight container or freezer bag in your freezer for up to 3 months.  When you want to reheat, simply let thaw for a few hours in the refrigerator.
