Simple Healthy Breakfast Potatoes with Garlic

We find that when we load up on healthy foods for breakfast it keeps us from reaching for the unwanted foods mid-morning. Don’t give up your morning eggs and potatoes because you think it’s not good for you! Learn how to make your favorite breakfast foods with less fat and more nutrition.
Serve some healthy carbs with your breakfast by making these delicious potatoes.
- 2 lb. baby red potatoes, cut into small chunks
- 2 tablespoons olive oil
- 4-6 cloves garlic, finely minced
- 1 small red pepper, chopped into small pieces
- 2 tablespoons feta cheese
- salt & pepper
Preheat oven to 425 degrees.
Brush a little olive oil on a baking sheet.
Lay potatoes and red pepper on the baking sheet and drizzle olive oil over both.
Lightly toss until well covered with oil.
Lightly salt & pepper.
Bake in the oven for 20 minutes.
Carefully remove from the oven and stir with a metal spatula.
Sprinkle the garlic on top of potatoes and pepper and put back in the oven.
Bake for an additional 15-20 minutes.
Sprinkle with the feta cheese and serve.
If you love garlic as much as we do, you can also sprinkle a little garlic salt on the potatoes before cooking.
