Sausage Stir Fry – Easy Noodles and Sausage Recipe with Udon Noodles and Spinach
For a quick and delicious family meal, try this noodles and sausage recipe. Start by boiling udon noodles according to package instructions or use the precooked noodles. Meanwhile, cook Italian sausage over medium-high heat until it’s fully cooked through. Combine the cooked udon noodles with the sausage and the brown sugar & soy sauce for a complete dish that everyone will love!

This is one of those recipes that if you use the precooked noodles, it takes only about 15 delicious minutes to get on the dinner table.
Where to find precooked Udon Noodles? Look near the ethnic products in your grocery store and you should be able to find packages of these noodles. Follow the directions and place in boiling water for 1 minute, or do like we do and just toss them in the skillet with 1 tablespoon of additional water, or run under hot water for a couple of seconds. These noodles are easy to work with and so quick and convenient.
Ingredients Needed for Noodles with Sausage:
- Italian Sausage Links
- Olive Oil
- Soy Sauce
- Brown Sugar
- Udon Noodles
- Chopped Fresh Spinach

- 1/2 lb. Italian Sausage (we use chicken)
- 1 tablespoon olive oil
- 1-1/2 tablespoons soy sauce
- 1/2 tablespoon brown sugar
- 12 oz. Udon Noodles
- 1 cup chopped spinach, thawed and cooked in the microwave

Remove sausage from casings. Using large nonstick skillet, cook sausage on medium-high until sausage is browned and crumbled, using a spatula to break up meat as it cooks.

When sausage is cooked through, add the noodles to the pan with the sausage. Drizzle with brown sugar and soy sauce, gently sauteing to combine.

Add the spinach to the pan and stir until everything is combined.
How to Cook the Italian Sausage
Buy fresh sausage links at the meat counter or deli and easily remove the sausage from the casing by running a sharp knife gently down the side of the sausage. Peel away the casing using your fingers.

What Noodles to Use for this Recipe
Look around for you favorite brand of cooked Udon noodles that are packaged in a vacuum sealed package. If you can’t find Udon noodles that are precooked, use your favorite brand of uncooked noodles and just cook according to package directions. We use both Udon noodles and Soba noodles in this recipe. Both noodles will work just find.
If you don’t have either Udon or Soba noodles then a regular spaghetti noodle will work also! Just add your cooked and drained spaghetti.
