Poached Eggs with Garlicky Kale

Poached Eggs with Garlicky Kale and Feta

Start the day off right with a breakfast of poached eggs over a bed of garlicky kale.

If you didn’t love kale before, try this recipe that uses delicious runny eggs over a bed of garlicy kale and topped with just a hint of feta cheese. It is so delicious AND nutritious that you will be tempted to make this breakfast a few times a week if not more.

You will need to start with 1 large bunch of kale that has been cleaned and the ribs removed. You can see what we mean right here –> Clean that Kale.

The more kale you eat the more you love it! Eat those healthy greens!

Ingredients
  • 1 large bunch kale, cleaned and chopped into small pieces (about 4 cups)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 poached eggs (Soft Poached)
  • 3 cloves garlic, minced
  • 2 tablespoons feta cheese
  • salt & pepper
Instructions
  1. Add about 1/2 cup of water and the kale to a large skillet with a lid; bring to a light boil.

  2. Salt & pepper kale and cover. Reduce heat and let kale simmer on low for about 4-5 minutes.

  3. Uncover and push kale to the side of the skillet using a spatula.

  4. Add the garlic to the empty side of the pan along with the oil and butter.

  5. Cook garlic for about 1-2 minutes and then mix in with the kale.

  6. Add additional oil if necessary and let cook for another minute.

  7. Place cooked kale on 2 plates and top each with 2 poached eggs and a sprinkle of feta cheese.

 




 

Cooking the garlic with the kale

Steam the kale in the skillet first to soften then push to the side of the pan and add the garlic.
