Poached Egg Florentine – Easy with Spinach and a Light Cheese Sauce

On weekends we like to “healthy up” our eggs by serving them Florentine Style.
What is Eggs Florentine? Poached eggs over a bed of spinach with tangy cheesy sauce. And since we always like to serve and eat protein with our breakfast, we tuck this tasty turkey patty underneath it all. It makes a complete and healthy breakfast when you add a small side of fruit.
Poached Egg Florentine – Low Calorie and Low Carb – Healthy Breakfast that will keep you going well until lunch!

Delicious and Healthy Egg Way to Start Your Day.
- 4 poached eggs
- 4 turkey patties
- 1 box frozen spinach, thawed
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 1 teaspoon Dijon mustard
- 2 teaspoons lemon juice
- 1/2 cup shredded cheddar cheese

Cook your turkey patties in a skillet with a little olive oil and butter until cooked through.

Cook frozen spinach according to package directions.

Melt butter in a small pan or skillet and slowly whisk in flour. Whisk for about a minute or until flour and butter are well blended. Salt and pepper lightly.

Slowly pour in milk and stir for about 2 minutes or until sauce start to thicken.

Once the sauce starts to thicken, stir in the cheese, mustard and lemon juice. Add additional salt and pepper if necessary.

Lay the turkey patty on a plate, followed by spinach, followed by the poached egg. Pour cheese sauce over the top.
This is a Healthy and Delicious Egg Recipe that our family enjoys on weekends! We sure hope you enjoy this too!
- Season the turkey patties with a little garlic and sage or a couple shakes of soy sauce.
- You can definitely use fresh spinach for this egg recipe. Clean spinach under running water and shake to dry. Toss all of the spinach into a skillet with a small amount of chicken broth or water. Lightly salt & pepper. Cook until spinach wilts and is soft. Drizzle with olive oil.
What is the Difference Between Eggs Florentine and Eggs Benedict?
The main difference is the addition of cooked spinach to the Eggs Florentine. Eggs benedict is poached eggs served on top of an English muffin with ham and savory sauce.
