Pineapple and Cucumber Salsa
This is a healthy and delicious way to eat more pineapple! Make a salsa by mixing diced pineapple with diced cucumber and red pepper. Mix in a little feta cheese and a splash of fresh lime juice. Don’t forget to sprinkle with salt & pepper.
The combination is a delicious mix of sweet and salty – you can eat it with a spoon or use it as a topping for your healthy turkey burgers.
Beautiful and delicious - healthy salsa that you an enjoy alone or on your burger
- 1 medium cucumber, peeled and seeds removed
- 6 slices of pineapple
- 1 small red pepper, seeds and ribs removed
- juice from 1/2 lime
- 1/4 cup feta cheese
- salt & pepper
- Dice vegetables and pineapple into small pieces and mix together in a medium bowl. Add the feta cheese and lightly salt and pepper. Squeeze juice from 1/2 lime over everything and then gently mix.
Use this delicious Pineapple Cucumber Salsa to top your turkey burgers on a bun with a little mayo, or use the salsa on top of the burgers without a bun. Both are super-delicious ways to use this salsa.
