Orzo Pasta with fresh Cherry Tomatoes, Spinach and Cheese
This orzo pasta dish tastes amazing and something we make often in the summer. Garden fresh tomatoes and spinach are paired with cooked orzo pasta and delicious Gorgonzola cheese. Fresh and healthy side dish for dinner.
My neighbor brought over a bowl of perfect little cherry tomatoes she had just picked from her garden. One of my favorite recipes for cherry tomatoes immediately came to mind.
So happily I decided to make it one last time before all the garden tomatoes disappear! This is another recipe that only uses a few ingredients but tastes super delicious!

Fresh and tasty way to prepare orzo pasta.
- 1 cup orzo pasta
- 1 can chicken broth
- 1 cup water
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- salt and pepper to taste
- 1/2 teaspoon sugar
- 2 cloves garlic, minced
- 2 cups fresh chopped spinach
- 1/2 cup crumbled Gorgonzola cheese
Cook orzo pasta in chicken broth and water until tender.
Drain pasta and reserve 1/2 cup of the cooking water.
While the pasta is cooking, slice the cherry tomatoes in half. Add olive oil to the skillet and cook tomatoes for about 3 - 4 minutes or until tender.
Lightly salt and pepper tomatoes while cooking and sprinkle with the sugar.
Add the spinach to the pan with the tomatoes and the 1/2 cup of reserved broth.
Let this cook for about 3-4 minutes or until the spinach is tender. Add the cooked pasta and cheese.
Stir well and enjoy!
