Vegan Orzo Pasta with fresh Cherry Tomatoes and Spinach
This orzo pasta dish tastes amazing and something we make often in the summer. Garden fresh cherry tomatoes and spinach are paired with cooked orzo pasta to make a great fresh and healthy side dish for dinner.
My neighbor brought over a bowl of perfect little cherry tomatoes she had just picked from her garden. One of my favorite recipes for cherry tomatoes immediately came to mind.
So happily I decided to make it one last time before all the garden tomatoes disappear! This is another recipe that only uses a few ingredients but tastes super delicious!

Fresh and tasty way to prepare orzo pasta.
- 1 cup orzo pasta
- 1 can vegetable broth
- 1 cup water
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- salt and pepper to taste
- 1/2 teaspoon sugar
- 2 cloves garlic, minced
- 2 cups fresh chopped spinach
Cook orzo pasta in broth and water until tender.
Drain pasta and reserve 1/2 cup of the cooking water.
While the pasta is cooking, slice the cherry tomatoes in half. Add olive oil to the skillet and cook tomatoes for about 3 - 4 minutes or until tender.
Lightly salt and pepper tomatoes while cooking and sprinkle with the sugar.
Add the spinach to the pan with the tomatoes and the 1/2 cup of reserved broth.
Let this cook for about 3-4 minutes or until the spinach is tender. Stir in the cooked pasta.
Stir well and enjoy!
The cherry tomatoes smell delicious! There is nothing more delicious than the perfect cherry tomato just busting with fresh flavor.
Add the fresh spinach and reserved broth. You can also add some crumbled Vegan Cheese!
