RANCH STYLE TILAPIA

1-1/2 lb. tilapia fillets 
1 cup seasoned bread crumbs
1 (1 ounce) package dry Ranch-style dressing mix 
1-1/2 Tablespoons Canola Oil


Preheat the oven to 400 degrees.


Place the bread crumbs and ranch dressing mix in a bowl and mix well to combine. Coat the tilapia fillets with oil then dredge them in the bread crumb mixture. 

Spray a baking dish with non-stick spray. Place the tilapia fillets in the baking dish and bake for 10-15 minutes or until fish easily flakes with a fork.

ROASTED BABY POTATOES

1-1/2 pound baby white potatoes, sliced in quarters
4 teaspoons minced garlic
2 tablespoons olive oil
1 tablespoon dried parsley
1/4 teaspoon salt
1/4 teaspoon ground black pepper


Preheat the oven to 400 degrees. Coat a cookie sheet with cooking spray. In a large bowl, add the potatoes, olive oil, garlic, salt and pepper. Mix thoroughly until the potatoes are coated evenly. Arrange the potatoes in a single layer on the cookie sheet and bake for 40-45 minutes turning potatoes once.  Sprinkle with parsley and serve.
