SAUCY CHICKEN*
1 1/2 lbs. boneless chicken breasts, cut into serving pieces
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. diced celery
1/2 c. diced onions
16 oz. can cranberry sauce
1 c. barbecue sauce
Preheat oven to 300 degrees.
Combine all ingredients except chicken in a large bowl. Whisk to combine. Place chicken in an oven-proof casserole or a Dutch oven, and pour sauce over top. Bake for one hour.
Open the oven door, and turn the heat back to 200 degrees. When temperature is reached, close the door, and bake for an additional 4-6 hours. Serve immediately.
*Allow enough time to prepare this recipe. This can also be prepared in a crockpot/slow cooker. Follow directions above, and place in pot on low for 6-8 hours.
