Low Carb Portobella Mushroom Pizza
The next time you think you need a cheat day on your healthy lifestyle diet by sneaking in some pizza, consider trying this low carb portobella pizza that is really quick and delicious, not to mention low in calories!
By the time you would of called for take-out pizza, or popped a frozen pizza in the oven, these fresh little mushroom pizzas are ready and will save you a zillion calories and an overload of carbs that will head straight to the waistline.
There are many reasons to add the mighty nutritious mushroom to your diet each week, but aside from nutrition, they are very low in calories and of course no fat. There are only about 30 calories in a large mushroom cap.
Make this a healthy side dish and cook some extra sauce to serve with noodles for the kidos. Portobella mushroom pizza and a healthy green on the side is perfect for a low calorie adult meal.
The nice thing about this healthy recipe is you can use any tomato-based sauce you like to make it even quicker. Or just mix some tomato sauce with oregano and pour over top of the mushrooms.
Use a little bit of fresh Parmesan cheese as well if you would like.

- 4 large portobella mushroom caps
- 1 tablespoon olive oil
- salt & pepper
- 1-1/2 cups tomato sauce
- 1 teaspoon oregano
- 2 teaspoons crushed garlic

Preheat oven to 400 degrees.

Remove the dark insides from the mushrooms.

Place the mushrooms on a baking sheet and brush with olive oil.

Roast mushroom caps for about 8-10 minutes.

While mushrooms are baking, saute garlic in olive oil until tender. Add tomato sauce and oregano to the cooked garlic. Let simmer gently while the mushrooms finish cooking.

Remove mushroom caps from the oven and sprinkle lightly with salt & pepper and a touch of oregano. Carefully drain any liquid from the mushrooms.

Spoon sauce over mushrooms followed by a sprinkle of cheese.

Place back in the oven for about 5 minutes or until heated through.
Getting your mushrooms ready to make the super-delicious Portobella Mushroom Pizza – gently scrape away the dark insides with a spoon. Wipe the outsides of each mushroom with a damp paper towel.
