Pasta with Lemon and Ricotta

It’s the simple meals in the summer that provides us with so much delicious pleasure. Move your picnic table underneath a tree and eat dinner with your bare feet in the grass.
This lemon ricotta pasta makes a great side dish or can be the main feature with a nice vegetable-laden tossed salad.
This dinner actually goes well fresh with corn-on-the cob and maybe some or our awesome oven fried chicken!
Ingredients Needed for Lemon Ricotta Pasta Sauce with Linguine
- Linguine
- Olive Oil
- Butter
- Lemon
- Ricotta Cheese
- Shredded Parmesan Cheese

Lemon Ricotta Pasta Sauce Makes A Delicious Dinner Using Ricotta Cheese and Lemon.
- 1/2 lb linguine
- 1/2 cup reserved pasta water
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 1/4 cups ricotta
- 1/2 cup finely shredded Parmesan
- Salt & freshly ground black pepper

Cook pasta according to package directions, adding a little soup base and salt to the cooking water. Drain and reserve 1/2 cup of the pasta water in a glass measuring cup.(one cup)

Return cooked pasta back to the pot.

Add the butter and a little squeeze of lemon to the hot reserved cooking water.

In a medium bowl, stir together the ricotta and reserved pasta water. Add a little salt and pepper to the mixture.

Pour the sauce over the hot cooked pasta and stir. Add in the lemon juice, lemon zest, cheese, salt & pepper.

Toss the pasta until everything is well blended.

Serve on plates and sprinkle with Parmesan cheese.
What Pasta or Spaghetti to Use for this Lemon Ricotta Pasta Sauce?
We use Linguine because we enjoy a thicker pasta with this yummy sauce. But you could also use a regular spaghetti or our favorite Vermicelli spaghetti. Penne pasta would also work well if you would prefer a smaller noodle.
Why We Love Soup Base for Cooking Pasta
We always add a little soup base to our cooking pasta water to add lots of flavor when making some of our pasta recipes … we sure hope you have some on hand. Our reserve pasta water always turns out super delicious.
Tips for a Better Pasta Recipe:
- Add the soup base and a little salt to the water when cooking the pasta
- Don’t forget to reserve the 1/2 cup of cooking water
- Don’t overcook the pasta
- When you add the linguine to the boiling water, stir for the first 30 seconds to prevent pasta from sticking together
What Could You Add that Would Make a Great Addition to this Lemon Ricotta Recipe?
Shrimp would be a great addition. A lemon ricotta shrimp pasta dish. Add steamed or pan fried shrimp with a little butter, garlic and lemon.
Leftover shredded chicken would also work well.

Yes, leftovers keep well in the refrigerator for about 3 days. Always store pasta in an airtight container.
