Heart Healthy Chili Recipe with Ground Turkey

Healthy Chili is Delicious
- 1-1/4 lbs. ground turkey
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 large green pepper, chopped
- 2 (15.5 oz.) cans dark red kidney beans
- 1 (14.5 oz.) can diced tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1/2 (15 oz.) can pumpkin
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 tablespoon brown sugar
Using a large skillet, sauté onions and green peppers in olive oil until tender. Add garlic and sauté for about 1 additional minute.
Add ground turkey to the skillet and brown, chopping with a spatula as you go in order to make the ground meat fine.
When the ground meat is browned, add the tomato paste, brown sugar, and 1 teaspoon of chili powder to meat. Stir until well blended through the ground turkey.
Add the rest of the ingredients and 1 (15 oz.) can of water, stir and simmer for about 30 minutes.
