Hawaiian Beef Meatballs with Pineapple – Perfect for a Luau or Back Yard Picnic/Party

- 1 small can pineapple chunks juice reserved
- 1 jar maraschino cherries
- 3 lbs ground beef
- 3 eggs
- 3 tablespoons of soy sauce
- 3/4 cup brown sugar
- 1/4 cup of reserved pineapple juice
- 3 tablespoons dried minced onions
- 2 teaspoons dried ginger
- 1-1/2 cups bread crumbs
- 1-1/2 teaspoon salt
- 1/2 teaspoon pepper
Preheat oven to 400 degrees.
Line a cookie sheet with foil and spray lightly with nonstick spray.
Mix everything together with the exception of the pineapple chunks and the maraschino cherries.
Gently mix the beef using your hands.
Form small meatballs and place each one on the cookie sheet.
Bake for 12-14 minutes depending on size.
(Mix some of the meat with finely chopped cherries and pineapple for a delicious sweet meatball.)
Use the rest of the cherries and pineapple to garnish a few of the meatballs.
