Fried Rice with Minute Rice
Every minute counts when you have a job, family and house that needs cleaned. Some days you just aren’t going to be able to do it all .. and that’s ok.

I have a confession to make – I love using Minute Rice!
In the heart of the battle for clean eating and good health stands a box of red Minute rice. Is it a convenience food or a healthy source of carbs and fiber? Or maybe a little bit of both … Is this rice something that one should feel good about feeding their family if it only takes 5 minutes to cook?
Well, we think yes!
Minute Rice is an enriched rice long grain rice that contains Thiamin, Niacin and Folate. It’s a deliciuos instant rice that cooks complete in only 5 minutes.

Dinner is on the table in only 15 minutes that your family will love!
- 2 cups Minute Rice, uncooked
- 2 cups water
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 small eggs, lightly beaten
- 2 cups peas and carrots, thawed
- 2 teaspoons Sesame oil
- 2 tablespoons Soy Sauce or Tamari
- 2 tablespoons Rice Vinegar
- 1/2 tablespoon sugar
- 2 teaspoons cornstarch

Bring 2 cups of water to a boil with 1/2 teaspoon salt. Add the Minute Rice to the pan and stir. Cover and remove from the heat and let sit for 5 minutes.

To Make the Sauce: Using a small bowl, whisk together the sesame oil, Tamari, rice vinegar, sugar, and cornstarch.

Using a large skillet, use half of the butter and oil to gently cook the eggs. Lightly salt & pepper eggs and they cook.

Remove eggs from the skillet to a dish and add the rest of the butter and oil. Cook the peas and carrots for about 3-4 minutes,

Add sauce to the pan and stir. Cook for about 2 minutes.

Add eggs and rice to the skillet and stir until everything is well coated. Cook on low heat for about 3-5 minutes.
Cooking and eating at home is almost always better than eating out. It saves tons of money and you control the salt, fat and nutrients that goes into each meal.
Once you see how fast you can make this delicious Fried Rice using Minute Rice – add additional ingredients like:
- Green Onions
- Thinly Sliced Cabbage
- Sliced Mushrooms
- Green Beans
- Chopped Cashews
- Cooked Chicken
- Shrimp
