Easy Red Beans and Rice Recipe

We love using “Uncle Ben’s” brown rice in this recipe. Your family will be pleased and may just never guess that you are using brown rice if they are not brown rice lovers!

- 1 1.25 lb. package HoneySuckle White Lean Turkey Italian Sausage - Sweet
- 1 tablespoon olive oil
- 1/4 cup water
- 1 cup Uncle Ben's whole grain brown rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon Cajon seasoning
- 2-1/4 cups chicken broth*
- 1/4 cup chicken broth
- 1 14.5 oz. can kidney beans
In a medium sauce pan with lid, sauté onions and garlic in olive oil for about 2 minutes on medium-high heat. Add brown rice and continue sautéing and stirring for an additional minute. Add 2-1/4 cups chicken broth, bringing to a slight boil. Reduce heat and simmer (covered) for 30 minutes.
Cut the ends off of each turkey sausage link. Squeeze turkey out of the casings. Bring 1/4 cup water to a simmer in a medium sized skillet. Add sausage and sauté until well browned, chopping into small pieces with a spatula. Add beans to sausage, sprinkle with Cajun seasoning and mix through. Cover and Remove from heat. Leave sausage and beans sit until the brown rice is finished.
When brown rice is finished cooking, add the sausage & bean mixture to the rice. Stir well to combine. Add additional 1/4 chicken broth, remove from heat and leave sit for about 5 minutes before serving.
Add additional Cajun seasoning to taste.
